Recipe: Creamy Potato and Kale Soup (low fat)

I finally have kale after managing to grow a crop in my garden without the  destructive neighbours cats not violently attacking my fragile plants. After extensive research (google) I discovered citrus spray works wonderfully at mitigating cats and I happily harvested my kale last week.


Being the soup obsessed person I am, I decided to make a creamy kale soup thanks to the wonderfully tasty lactose free milk they have started selling at my local grocers. Here is the recipe:

Ingredients:
2 cups of stock
2 small onions
3 large potatoes
4 stalks of celery
1 ear of corn (corn removed)
1.5 cups diced kale
3 cups of skim milk
Pepper
Parmesan

Directions:
Fry onions till glassy and add vegetables, chopped, with stock. Simmer for 40 minutes and reduce the temperature until just below boiling, add milk pepper and parmesan and mix well. Stand for 5 minutes at this temperature and then serve. enjoy.
