During the last week the New Zealand summer has reached its element. Yesterday was Christmas and my family and I enjoyed a relaxed brunch at Judges Bay reserve, by the beach. We all brought our different favourite dishes and one of my contributions was my home blended iced tea.
When choosing a tea base for iced tea its important to pick a blend that isn't too bitter and heavy in tannins. I used a lovely light Sri Lankan orange pekoe but a good quality Darjeeling would also work well.
Festive Berry Iced Tea (Makes 1 Litre):
600-700 Premium Black Tea (brewed slightly stronger/longer than usual)
2 Tablespoons of honey
Fresh Mint
1/2 Cup Raspberries
Strawberries and Ice (till jug is full)
