Some days I get home and I want a quick and easy meal with no effort. Something that can be ready in under five minutes and packed with nutritional value and yummy flavors. One of my favourite go to dishes is my dairy free 'cheesy' scrambled eggs. Nutritional yeast is an awesome cheese flavored substitute and its packed with vitamin B's and folic acid, which is so important to get into your system if you don't eat meat.
Ingredients (serves 2)
2 Handfuls of Diced Kale
1/2 Tsp Coconut Oil
4 Eggs
1.5 Teaspoons Nutritional Yeast
Salt and Pepper
Sprouts/Avocado (optional)
Heat coconut oil on medium heat in a medium sized fry pan and cook the kale for 2-3 minutes. Beat eggs well sifting in nutritional yeast while reducing the pans heat to low. Pour in the egg mixture, scramble until set and then stir in seasoning. Garnish liberally with sprouts and avocado.
