5 Simple, Healthy and Gluten Free Lunch Options

  
 I always find the key to not slipping into bad food habits and ensuring your properly nourished is preparation and planning. For me the meal I am most likely to slip into bad habits with is lunch, if I don't pack something or plan a healthy alternative I have to grab something quick, and often not so nourishing. This is why I find it helpful to plan my week ahead with quick, simple and healthy lunches. Here are my current favourites:

Prawn and Herb Rice Paper Rolls (Pictured above)
These are some of the quickest lunches to whip up. You can either prep them the night before or take the ingredients to work and assemble there.


 Italian Quinoa Salad with Pumpkin and Broccoli
Quinoa makes a great lunch because its filling and packed with protein to keep you energized throughout the day. This salad is packed with moor-ish italian flavours and a delicious crunch of almond a broccoli. Its perfect for those days when you need just a little bit more energy.


Tumeric Sweet Potato Chips
I love these bad boys so much more than the regular potato oven chips. They are sweet and soft with the perfect amount of crunch. Perfect for those days you feel like something a bit more snack-y and indulgent.


Healthy 2 Minute Noodles in a Jar
This tasty lunch is the quickest meal you can get! Basically, just add water. Its a fun and tasty alternative to instant noodles and is packed with delicious Asian food ingredients like Thai herbs and Shiitake mushrooms.


Zesty Coriander (Cilantro) and Red Cabbage Salad
This salad is a sight for sore eyes and a hungry stomach. Its a feast of textures, colours and flavours and is simple to prep, with only a few minutes of slicing and dicing. Perfect on its own, or with a side of protein for a mid week packed lunch.
