Spicy Prawn Spaghetti Sauce


Yes, the above produce is from my garden and i am very much enjoying cooking with it. This week I made a delicious fusion pasta sauce that was so moorish. Here is the recipe:

Ingredients
- 2 cups of cherry tomatoes
- 1 red onion
- 1 tsp minced garlic
- small bunch of kale
- 2 cups of prawns
- 2 zucchini
- 1/2 cup mushrooms
- red wine
- fresh oregano and basil
- 1 tsp ground chilli

Fry onion in olive oil until glassy and add mushrooms and garlic, reducing heat to medium. Add mushrooms, tomatoes, zucchini and cup of water - simmering for 15 minutes. If sauce reduces rapidly add more water. Add prawns, kale, herbs and spices and a couple of 'glugs' of red wine. Cook until prawns have turned pink (cooked).


Serve on top of fettuccine or spaghetti and dig in... enjoy.
