Recipe: Vegetable Brunch Omelette

If I were to pick a favourite meal, it would definitely be brunch. I always enjoy a lazy cooked breakfast on my Saturdays and yesterday I cooked an omelette in my handy little mini fry pan, it is perfect for cooking breakfasts.


Ingredients:
- 1 full egg
- 1 egg white
- 1 grated zucchini
-1 cup of diced tomato
-1/4 pepper
- basil leaves
- 1 large cup of spinach
-1/2 avocado
- salsa


Spray frypan with cooking spray and heat. Mix eggs until fluffy and pour into the bottom of the pan cooking at medium heat adding the zucchini, tomato and capsicum. Once the omelette is set flip and cook through. Serve with wilted spinach, avocado and salsa. Enjoy
