I just adore pumpkins, I really do, they have been on of my favourite foods since I was a toddler. There are many a childhood photo of me stuffing my face with pumpkin soup. Recently I found the local organic store was selling the most adorable artisan pumpkins. I really didn't want to eat them because they were so beautiful.
Cook the quinoa and mix in spices with fruit and almonds. Slice the pumpkins in half and scoop out the seeds. Fill the cavity with the spiced quinoa and bake @ 200 for 30-40 minutes.
Serve with a side of veges and some plain yoghurt. Enjoy
