I have been loving my local food market as of late. They have been stocking some truly beautiful produce and I just can't wait to go shopping every week. This week that had some gorgeous red cabbage in stock and I went a little crazy with it. Coleslaws, Salads, and my personal favourite - spicy orange seared cabbage. Ingredients:
1 Large Orange
1/3 Large Red Cabbage
1/4 Tsp Hot Dried Chilli Powder
1/2 Tsp Ginger
1/2 Tsp Nutmeg
1 Tsp Cinnamon
2 Star Anise (optional for a more liquorice flavour)
Black Pepper
Dice the cabbage into uneven chunks, this will give it prettier presentation and a nicer consistency. Peel orange and dice it into small cubes. Heat a pan at medium-high heat and add a small amount of coconut oil, once heated add the cabbage and cook for 2-3 minutes. Toss in orange and spices with approximately 2 tablespoons of water and simmer for a further 2-3 minutes until the orange has softened and the spices have been absorbed
Serve and enjoy your beautiful dish.
