Recipe: Japanese Inspired Stir Fried Vegetables

I love Japanese food. I think I eat sushi once a week and constantly am snacking on miso soup and soy beans. There is something about the delicious stocks and the clean flavours that really appeal to me and the great bonus is they are so healthy, packed with iron and a cocktail of great vitamins.

This recipe is so simple and quick to make. Its a great crowd pleaser, my parents adored it and have been chatting about it ever since I made it for them.



Wilt spinach in hot water for 2 minutes removing the stalks to fry with the onions. While doing this melt the butter frying onion and spinach stalks until glassy. Add spinach, edamame and sesame seeds. Finally mix in ginger and Japanese soy. Plate while hot. Enjoy.
