My garden has continued to flourish, especially in the tomato department. I have been using them in everything: sauces, curries, stews and fresh. Today I enjoyed them on open faced sandwiches with some beautiful wholegrain toast.
Ok, so they were amazing. There is nothing like the sweetness of homegrown produce with artisan cheese and bread. It made me feel like I had stepped into Italy, especially because it was baking hot and sunny.
Ingredients:
-Wholegrain Bread
- Avocado
- Tomatoes
- Basil
- Cheese (pecorino)
- Balsamic Vinaigrette
- Salt and Pepper
