Recipe: Prawn and Herb Rice Paper Rolls (Gluten Free, Dairy Free, Low Calorie)
I love quick meals, especially when they are healthy, delicious and fun to make. These rice paper rolls are a 5-10 minute dish and a great interactive activity for a dinner party with friends. They are also really great for picky eaters as you can custom make your roll to suit you. This particular mix is my personal favourite - I love stuffing as much herbs as possible into the wraps so that every mouthful is a explosion of flavour.
Ingredients:
1/2 Teaspoon Coconut Oil
Prawns (12 per person)
Cucumber
Capsicum
Tomato
Pea Sprouts
Fresh Mint
Fresh Coriander
Almond Butter
Rice Paper (3 per person)
Dipping Sauce:
2 Tablespoons Coconut Milk (light)
1 Tablespoon Lime Juice
1 Tablespoon Sweet Chilli
Chopped Peanuts
Instructions:
Heat the coconut oil in a fry pan and add prawns. Fry on medium heat until prawns turn pink. Slice the cucumber, capsicum and tomato into thin strips. Boil water and in a separate small bowl mix together the dipping sauce ingredients.
Soak rice paper in hot water for 20-30 seconds and remove, placing on a chopping board. Place prawns, salad, a liberal amount of herbs and a teaspoon of almond butter on each wrap. Wrap as tightly as possible without breaking the rice paper and either pour over with or dip into sauce. Enjoy.
