Winter Warmer Recipe: Coconut Scallops

Coconut Scallops (Dairy and Gluten Free, Low Calorie)

Theres nothing like something creamy and cozy in these cold evenings especially if its a 15 minute meal packed with mushrooms and scallops. I love the subtle combination of flavours with its creamy sauce and fresh vegetable flavours - my new favourite winter warmer.


Ingredients (Serves 4)
1/2 Tsp Coconut Oil
1 Stalk of Spring Onions
1/2 Cup of Mushrooms (Chopped)
15 Scallops
2 Small Potatoes
1/4 Can Light Coconut Milk
1/2 Cup Frozen Stir Fry Vegetables
1/2 Teaspoon Chilli Flakes

Instructions
Slice the spring onions and mushrooms and thinly slice the potatoes. Heat oil in a pan and add mushrooms and spring onions, fry on medium heat. Add scallops and lightly fry for a minute. Add coconut milk and thinly sliced potatoes simmer until potatoes have softened. Add chilli and vegetables and cook for a further 5 minutes (until vegetables are warm). Serve piping hot and enjoy.
