Leek is so beautiful in soups, combined with the savoury of kale and the sweetness of parsnips, it makes a truly beautiful flavour combination. This soup is simple to make and full of fresh, clean flavours, perfect for the cold, wet weather as of late.
Ingredients:
2 Large Parsnips
1 1/2 Cups Diced Kale
1 Leek
2 Cups Chicken Stock
1 1/2 tsp dried Marjoram
1 Tbsp Butter
Recipe:
Dice the Leek and shallow fry in the melted butter. Add Parsnips, Kale and Marjoram and simmer with stock and a cup and a half of water for 20-30 minutes. Serve hot and enjoy!
