Ingredients (Serves 4):
- 4 Chicken Thighs
- 3 Red Onions (halved or quartered depending on size)
- 2 Carrots (cut into thick strips)
- 1 Medium Sized Kumara/Sweet Potato (cut into large bitesize chunks)
- 3 Zucchini (Cut into chunks)
- 6 Garlic Cloves
- 2 Lemons (halved)
- 2 Large Sprigs of Rosemary, broken
- Paprika
- 1-2 Tbsp Olive oil
Instructions:
Rub Chicken with Paprika, placing in baking tray, put vegetables around the chicken. Place garlic cloves evenly between vegetables and squeeze lemon over the tray. Sprinkle Rosemary over the tray and place the squeezed lemon halves at each corner. Sprinkle olive oil on the chicken and vegetables and bake at 180 until chicken is cooked through.
