Sometimes you can find quirky little treasures at op-shops that you can't find anywhere else. I had been looking for unique ramekins everywhere and earlier this week, I found some at St. Vinnies. I love rustic earthenware so these have been a perfect new addition to my little collection of kitchen candy.
I decided to christen my old-new purchases by making some tasty frittatas, using up my left over roast vegetables. Frittatas are so easy to make, just make a quick coating with cooking spray and layer pumpkin seeds, spinach and left over roast vegetables. Then fill in the ramekin with a well beaten egg and a spoon of cottage cheese. Bake it @ 180 for 20-30 minutes and... Tada! instant awesomeness
And sure enough my ramekins passed the cooking test! I'm looking forward to using them when I next entertain dinner guests.
