My new house has the most crazy kitchen layout whereby only one of the cupboard doors opens due to the not so insightful builders deciding it would be a good idea to put the bench in front of half of the cupboard. This means that some foods get pushed back and forgotten only to be rediscovered with much excitement.
This week I discovered an immense jar of chia seeds just sitting behind all my other jars and cans. This had me quite happy because I had pudding on the brain and was very keen to make a yummy batch of chia seed goodness.
Ingredients (serves 4):
1/2 cup of chia seeds
1 1/2 cup of almond milk
1/4 cup coconut milk (light)
1 teaspoon cinnamon
Honey to drizzle
Mint
Instructions:
Split chia seeds into 4 ramekins add almond milk and refrigerate for 1-2 hours. Top with coconut milk, cinnamon, honey and mint. Enjoy as a pudding breakfast with some fruit or a not so naughty, but indulgent, dessert.
