This year I was responsible for the steam pudding, my favourite dessert of all time. I didn't have any brandy on hand so I made an alcohol free ginger ale version. It was rich and delish, best part of the Christmas dinner.
Ingredients:
1 cup sultanas
1 cup raisins
1 cup currants
1/2 cup dried cherries
1/2 cup dried cranberries
70 grams of mixed peel
11/2 cup breadcrumbs
1 1/2 teaspoon baking powder
1 teaspoon mixed spice
1/2 teaspoon nutmeg
1 cup of shredded frozen butter
1 teaspoon almond essence
1 teaspoon brandy essence
1 cup brown sugar
3 eggs
Juice from one lemon
2-3 tablespoons of ginger ale
Instructions:
Mix dry ingredients together, add in dried fruit. Mix into batter by adding eggs, butter, lemon juice and essences. Leave to stand overnight, then add ginger ale. Steam for four hours, making sure water is always boiling then steam a further 2 hours before serving.
Serve with custard - enjoy.
