Recipe: Summery Sesame and Garden Pea Salad (GF, DF, V)

I had every plan to share with you all my scenes from the weekend but I got distracted by this yummy salad I made today. I will, instead, share scenes from the weekend later in the week and today introduce to you this fun new salad I experimented with. It's light, zesty and sweet (like a good old kiwi summer) with yummy nutty sesame undertones. I enjoy mine as a dinner main topped with an egg but you can omit the eggs to have a delicious fresh vegan main or barbeque side salad.


Ingredients (serves 4):

1 cup Romaine Lettuce
2 cups freshly shelled peas
1 cup pea shoots (halved)
Handful of Mint leaves

Dressing:

Juice of 1 Lemon
1/4 cup sesame oil
1 tsp tahini
1-2 tbsp sesame seeds (lightly toasted in a fry pan)
1 tbsp honey (or maple syrup)

Optional:

4 eggs


Bring hot water to boil and add eggs, for 6-7 minutes (for a soft boil). Place salad ingredients in a large bowl. Fill a food processor with dressing ingredients and mix thoroughly for 2-3 minutes, alternatively whisk them rapidly for 2-3 minutes. Toss in dressing and serve topped with a soft boiled egg. Enjoy.
