Recipe: Candied Lemon Slices

Lemon is by far one of my favourite flavours. I love it in both sweet and savoury dishes, plus its packed with Vitamin C, a must need for this winter - preventing colds and other nasty bugs.

Although candied lemon slices aren't exactly the healthiest snacks on the planet they are great for dressing up baking, as I did in the below picture for an Oxfam fundraiser bake sale, or simply dipped in melted dark chocolate with some red wine. Everyone needs treats and this is a tasty and beautiful one.


Ingredients:
2 Lemons
1 Cup of Brown Sugar
Water
Ice bath

Slice Lemon into paper thin, even slices and bring water to a gentle simmer in a sauce pan. Add lemon to cook for 2 minutes. Gently remove slices and place them in an ice bath.

Fill a flat fry pan or skillet with 1/2 cup of water and gently dissolve sugar bringing it to a boil. Reduce the heat to a medium temperature (simmer) and add lemon slices, one by one, with tongs laying them out as a thin layer, well separated. Simmer for half an hour, or until slices are translucent, and remove them with tongs. Cool and serve as a candy, or as a topping for cupcakes and cakes. Enjoy.
