Recipe: Stuffed Capsicums

This week on my regular fruit and vege shop I came across some beautiful king sweetie peppers. They are tangy and sweet and just perfect for stuffing and baking. So that's exactly what I did with them.



Ingredients (makes 4 stuffed halves):
  • 1 red onion
  • 1 cup of precooked brown rice
  • 1/2 cup of kale
  • 4 medium sized mushrooms sliced
  • marjoram
  • 1/2 tsp minced garlic
  • diced jalapenos to taste
  • goats cheese
  • 2 large king sweetie capsicums



Dice onion and heat pan sprayed with cooking oil cook until glassy. Add mushrooms, kale, marjoram and jalapenos frying 3-5 minutes. Stir in brown rice and take off the heat. Preheat the oven to 180.

Slice peppers in half and remove seeds and membranes. Stuff with the rice mixture and sprinkle with goats cheese. Bake for 150 minutes. Enjoy.




I had mine with baked salmon and steamed veges. Delish.
