One thing I have learnt recently is that in order to have a healthy lifestyle you don't have to give up your favourite foods you can 1) adapt and 2) sometimes just simply have those special treats. If I just lived off steamed vegetables I would lack the motivation to keep up a healthy lifestyle so I have been slowly developing easy alternatives to my favourite dishes. One of these is this delicious zucchini crust mediterranean style pizza.
Zucchini Crust Pizza (Makes Two medium pizzas)
Ingredients:
3 Large Zucchini
2 eggs
1 tsp minced garlic
1/3 cup low fat cheese
Recipe:
Grate or process the zucchini and mix with eggs, garlic and cheese. Place on baking paper and blind bake for 10 minutes @ 225 degrees celsius (or until golden).
Pizza Sauce:
Ingredients:
11/2 cups of cherry tomatoes
oregano
1 tsp minced garlic
black pepper
2 tbsp red wine
Instructions:
Place the tomatoes in a saucepan and add just enough water to cover the bottom of the pan. Cook on high until boiling and then reduce heat to low-medium. Simmer until tomatoes are falling apart and soft. Mix in herbs and garlic and reduce the sauce until thick. Add red wine and simmer for a further 2-3 minutes. The sauce is now ready for the pizza
Pizza:
Spread tomato pizza sauce onto the pre baked zucchini crust. Add any desired toppings (I put goats cheese, capsicum, avocado onion and basil) and bake @ 200 until cheese is melted.
