Quick Recipe: Healthy Popcorn Trailmix


Usually in the late morning I go through a bit of a energy dip at work and its great to have something to snack on and keep me going until lunch. I use popcorn as the base, because its filling but light - with very few calories. I also pop in peanuts and cashews along with chocolate coated goji berries and a sprinkling of sea salt. Its a great energy boost for a long day, and the goji berries add a huge vitamin punch with the vitamins of 3 fruit servings in 1 serving.
