Vegetarian Red Fried Rice (GF,DF,V)


Ingredients

3/4 Cup Dry Red Rice
Water
1 Tsp Coconut Oil
1/3 Cup Sunflower Seeds
1 Large Stalk of Shanghai Bak Choy
2 Eggs (beaten)
2-3 Cloves Garlic
1 Tablespoon Tamari/Soy
1 Cup Mung Bean Sprouts
1 Stalk Spring Onion/Shallots
Thai Basil & Coriander

Instructions

Thoroughly rinse rice and place in a pot, covering (by 2-3 cm) in water. Leave the pot to sit for 20 minutes and then heat on high until the rice reaches a boil. Reduce to a simmer and boil until water is reduced and rice is fluffy.

Slice the bak choy and shallots, heat oil (on high) in a large fry pan or wok add sunflower seeds, bak choy and eggs, mixing rapidly. Once the eggs are almost cooked mix in the garlic, soy, sprouts and shallots cooking for a further 3-5 minutes. Serve with generous amounts of basil and coriander.
