Smokey Basil and Peanut Stir Fry (GF, DF)

I love herbs, they are healing, nourishing and contribute loads of healthy flavour to cooking. One herb that I never can get enough of is Thai basil. Its tangy and liquoricey and adds a beautiful dimension to stir fries and salads. This smokey, peanut stir fry features some beautiful basil flavours and takes me back to the streets of South East Asia where its used more like a vegetable than a garnish or seasoning.

Ingredients

3 Tablespoons Tamari/Soy
2 tsp minced garlic
2 tsp minced ginger
1/2 tsp medium chilli powder
1 tablespoon of lemongrass paste
400 grams of lean beef
1 tablespoon sesame oil
1/3-1/2 cup organic peanuts
1 large zucchini
1 large capsicum
2 carrots
2 heads of bok choy
2 handfuls of basil leaves

Instructions


Dice the beef into stir fry strips and place in a bowl with tamari, garlic, ginger and chilli leaving it to marinade while preparing the vegetables. Slice  zucchini, capsicum and carrots into bite sized strips and prepare the bok choy by dicing the stalks and slicing the green into strips.

Heat oil in a wok at a high setting adding beef, frying for 5 minutes, add peanuts and fry till toasted and then add in vegetables, cooking for a further 5 minutes. Take off the heat and mix in fresh basil. Serve on a bed of rice and enjoy!
