This particular cake is the holy grail of not only raw and gluten free baking but of all chocolate fudge cakes. Packed with gooey chocolate moorishness and hints of dark cherries and mild chilli warmth this particular dessert is my new favourite. I have actually been guilty of having a small slice with my buckwheat muesli in the morning. This black forest cake is also completely guilt free as the ingredients are great for you and cruelty free. Its almost too good to be true, but it isn't.
Cake:
1/2 cup brazil nuts
1/2 cup walnuts
1 1/2 cup finely grated beetroot and/or carrot (i used post juicer pulp)
3 dates
3 dates
1 cup organic canned dark cherries
1/3 cup organic golden or maple syrup
vanilla essence
1/4 cup cacao powder
2 Tbsp of Psyllium Husk
Blend nuts in your food processor or blender until they are a fine breadcrumb texture. Add beetroot, carrot, dates, cherries, syrup and vanilla and blend till the mixture till smooth. Finally, add the cacao powder and psyllium husk and continue blending until mixture has no significant lumps. Line a square or rectangle freezer safe dish with non stick paper and spread in the mixture, using a knife. Place the dish in the freezer to set.
Frosting:
1 cup cashews
juice of 1 lemon
3 Medjool dates, soaked
1/4 cup golden/maple syrup
pinch of salt
1/4 cup cacao powder
50 grams coconut oil or butter (not vegan) (melted)
1 mild chilli finely minced(optional, membrane and seeds removed)
Blend cashews into a fine meal, using a food processor. Add the dates and briefly blend, following this up with syrup, lemon, salt and cacao, ensuring all lumps are smoothed out in the blending process. Finally, add melted coconut oil (or butter) gradually adding while blending slowly. Finally mix in the chilli.
Spread the frosting mixture over the set cake and cover it well with non stick paper. Leave the finished cake in the fridge/freezer to further set and serve alone, or with coconut milk ice cream. Enjoy.

Yum this looks good!! What brand are the cherries? I haven't seen canned cherries before, but I've never really looked ;-)
ReplyDeleteHi Nicola, you can make your own canned cherries (I have a friend who makes them) or in a pinch I use Delmaine Cherries - they aren't organic but the do the trick!
