Pumpkin, Kale and Quinoa Salad


Coriander (Cilantro) is one of my favourite herbs its subtle licoricey flavour gives an extra punch to otherwise bland meals. It blends beautifully with chillies and pumpkin - so thats what I put with.

Ingredients:
- 1.5 cups of Quinoa
- 1/4 Pumpkin
- 1 tbsp diced Jalapenos
- handful Coriander
- 1.5 cup Kale 
- Balsamic

Recipe:
Boil quinoa and slice the pumpkin, placing in a cooking spray coated tray and baking @ 200 for 80 minutes. Add the Kale (roughly torn) to the oven for the last 10 minutes of baking. Remove the vegetables from the oven and toss in a bowl with the other ingredients. Enjoy!
