Recipe: Rosemary and Lavender Roast Veges with Balsamic
Roast vegetables are one of the prettiest dishes to make. They are fragrant and colourful and oh-so-easy to prepare.
I made these over the weekend for a easy packed lunch. Basically I just chopped everything up and placed it on baking paper, drizzled over some olive oil and sprinkled on some rosemary and lavender from the garden and left them in the oven for an hour @ 200 degrees celsius.
I then drizzled on some light balsamic dressing and had them for lunch today while at work. They were the perfect packed lunch alternative to sandwiches and I loved eating all those bright colours.
