I love Japanese food, it is by far one of my favourite ethnicities food-wise. I love the flavour combinations of fresh clean foods, and heavy soy sauces and stocks. Today I made a simple and fresh noodle and spinach stir fry with portobello mushrooms and salmon.
Ingredients:
Soba noodles (i used about 20-30 grams)
1 wilted spinach (wilt by standing in boiling water for two minutes and then draining)
1 sachet of miso
1 tsp of butter
portobello mushroom
small fillet of salmon
Pan fry the salmon on the skin side for 5 minutes and then flip until cooked, at the same time fry the portebello mushrooms and boil the soba for two minutes. Blanch the Spinach in boiling water and place in a frypan with melted butter under medium heat. Add mushrooms and noodles and stir fry for a couple of minutes mixing in miso. Serve with salmon on top. nomsies.
