Recipe: Fresh and Clean Red Onion and Pea Soup

Fresh tasting soups are a great light lunch option or a good component for a bigger meal. This soup has a lovely minty flavour blended well with the small bite of onions.


Ingredients (Serves 4):
- 3 Small Red Onions
- 2 Teaspoons of Olive Oil
- 600 Grams of Frozen Peas
- 1/4 Cup of Chopped Mint
- Several Sprigs of Coriander
- Salt and Pepper to taste

Instructions:
- Dice onions and fry in olive oil until glassy and partially caramelized.  Add, with peas and herbs, to pot and add water till almost covered. Boil until peas are soft, but still retaining green colour. Add salt and pepper and blend with stick blender until well mixed and smooth. Enjoy.
