Mediterranean brown rice and quinoa salad


This is probably my favourite easy entertaining meal. Its delicious, simple to make, and vegetarian friendly.



Ingredients:
- Pumpkin
- Zucchini
- Capsicum
- Red Onion
- Eggplant
- Mushrooms
- 1 lemon, sliced
- 6 Garlic Cloves (whole)
- Fresh Rosemary
- Olive oil
- 2 Cups Brown rice (cooked)
- 1 Cup Quinoa (cooked)
- Balsamic Vinaigrette


 Place vegetables in pan drizzle with olive oil, garnish with garlic, rosemary and lemon. Bake at 200 degrees celcius for 1 hour. When vegetables are cooked place in a mixing bowl with cooked rice and quinoa, toss and add liberal amounts of balsamic vinaigrette.



Enjoy while warm, or refrigerate for a cool salad.
