My Granny used to make the most amazing shepherds pie and when was really little.I used to stay over at her place and ask for it each time. This recipe is kind of a combo of the two dishes, and its pretty healthy for something with so hearty.
Brown the onions and mince add flour and stir in a quarter cup of water to form a gravy. Add tomato paste, sauce, mushrooms and rosemary and cook through. Place in dish and top with potato gems and Parmesan cheese. Bake at 180 degrees Celsius for half an hour, or until gems are cooked and cheese melted.
I made it tonight for myself, my boyfriend and one of my best friends and it was a total crowd pleaser.
And to up my fruit and veg intake I had steamed veg on the side and finished off with some berries and natural unsweetened yoghurt.
