Recipe: Chocolatey Sunflower Bliss Balls

Sometimes I like to enjoy a little something special with my hot cuppa, especially in this rainy autumnal weather and nothing quite beats chocolatey goodness. My struggle with sweet treats is that often they are unhealthy and packed with refined sugar but these little goodies aren't. Based of bananas and sunflower seeds these babies are perfect as a mid morning pick me up with a big mug of oolong or bulletproof coffee.



Ingredients
1/3 cup sunflower seeds
1/3 cup cacao nibs
1/3 cup psyllium husk
1 small ripe banana
3 dates
1 cup LSA
cocoa powder for dusting

Instructions
Use a food processor to finely blend sunflower seeds and cacao nibs, add psyllium husk, bananas, dates and LSA to the mix and process it until the mixture is mostly smooth and fully blended. If the mixture is still thin or sticky add extra LSA.

Take a dessert spoon of mixture and roll it in cocoa powder on a flat surface, creating a round ball. Leave the balls to set in the fridge (short term) or freezer (long term). Enjoy.
