Recipe: Banana Oat Hotcakes

So I have been clamping down on my diet, and getting back to eating lots of low G.I. foods. As I am a breakfast lover (THE most important meal of the day, peoples) it is necessary for me to have a big, healthy and yummy breakfast every day. This morning I had banana oat hotcakes (gluten free) with fresh fruit, maple syrup and my usual matcha tea with soy milk and chia seeds.


For those of you who want a high protein and fibre start to the day -with no wheat these hot cakes are perfect! The ingredients are: 1 well mashed banana, 1/3 cup oats, 2 tbsp greek yoghurt and an egg. Just mix and fry in a non stick pan (though do be careful with flipping them as they are a bit more fragile than normal pancakes).
