Last night my brother brought over chinese takeout, which is very nice, but its also not the healthiest thing on the planet so I like to fill up with other good foods. I padded out the lemon chicken and fried rice with a whole lot of greens and edamame and I finished up with some miso soup to fill my belly. Miso soup is so delicious, and it has similar health benefits to marmite, high in vitamin B12 and lecithin - lowering blood pressure.
I have been upping my greens input as leafy green vegetables have so many health benefits and are high in iron, something I never have enough of. The thing with leafy greens, like spinach, is if they are cooked well they can be the highlight of a meal but if cooked wrong they are just plain gross. Today I developed my favourite greens dish ever. Its crispy and salty with lots of moorish crunch.
Ingredients:
1 Bombay Onion
4 Garlic
5 Bunches of Spinach (thoroughly rinsed)
Boiling Water
1 Tbsp Butter
1 Sachet Miso
Instructions:
Chop onion and garlic and remove spinach leaves from stalks, chopping stalks into inch long strips. Melt butter in pan and fry onion and garlic, making sure not to burn garlic or butter. Place spinach leaves in a metal bowl with boiling water while adding the spinach stalks to the butter, frying with the onions and garlic for 2-3 minutes. Drain the wilted spinach leaves and add to the mixture in the pan adding in the miso. Mix and serve with brown rice.
