I love Indian food. Its super spicy (and more often than not) healthy and vegetarian friendly. Indian food is also full of healing spices, such as turmeric (a super-spice that cures a variety of ailments) and ginger (an anti nausea and pain relief). In that I am contemplating returning to vegetarian-ism here is one of the recipes I recently developed.
Curry
1/2 cup dry mung beans soaked
1 onion (diced)
1/2 can chopped tomatoes
½ inch diced ginger
1.5 cup water
½ tsp crushed garlic
2 tsp chilli paste
3/4 tsp turmeric
Salt
Place Ingredient in a pot and boil for 1-3 hours (or pressure cook it).
Fennel seeds
1 tsp mustard seeds
1-2 tbsp butter
4 bruised/crushed garlic cloves
3/4 tsp garam masala
1-2 tsp cumin
1/2 tsp chilli powder
1 broken green chilli
Melt butter in pan and add seeds - fry briefly on medium heat. Add garlic and fry, until just before its browned. Remove from the heat and mix in spices, making sure to not burn them, and add green chilli. Mix this into the curry.
