This is the time of year when our citrus trees are laden with goodness. Citrus curds have a beautiful velvety texture and are amazing in and on pretty much everything (or you can just eat it by the spoonful if you're terrible like myself)
This is my very own grapefruit curd recipe - made with fresh, homegrown citrus:
Ingredients:
2/3 cup of sugar
Zest of 2 grapefruits
3 whole eggs
3 egg yolks
2/3 cup of grapefruit juice
Juice of one orange
4 tbsp of butter
- Add ingredients by order and mix until smooth and consistent
- Place on a double boiler: low heat slowly stirring
- Continue until consistency is that of a thick custard
- Cool and bottle. Then eat, nomnomnom
