Winter Chia and Cereal Bowls (GF, DF, V)

I am a big breakfast fan, especially in winter time. There's nothing like starting off a chilly winter morning with a warm porridge packed with almond milk and superfoods. Oats have traditionally been used for porridge for years, however, there are lots of other grain or seed alternatives which make a just as, if not more delicious hot breakfast. This particular mix is one of my favourites, and its very adaptable - high in protein, warming and filling with creamy chia, crunchy sunflowers seeds and aromatic amaranth.

Cereal Mix Ingredients (makes around 8 portions for cooking)

1/2 cup chia seeds
1/2 cup amaranth
1/2 cup sunflower seeds
2 tablespoons psyllium husk
1/4 cup brown rice

Cooking Ingredients (Makes 1-2 portions)

1/4 cup of mix
1 cup of water
Small Handful tart dried cherries
1 large dried fig diced

Topping Ideas

Almond Milk
Agave syrup/Raw Honey
Cacao nibs
Kiwi
Berries
Tahini
Nuts
Himalayan sea salt

Instructions

Place water in a pot and bring to the boil, reduce to a simmer and stir in cereal and dried fruit. Keep it on medium, stirring well until the cereal begins to thicken and come off from the edges of the pot. Reduce to a low heat and simmer for 10-20 minutes, or until amaranth is soft and clear. Place in a bowl and top with desired toppings. Enjoy
