Indulgent Vegetarian Chocolate Chilli (GF,DF,V)

Winter is here, and that means comfort food season, but wanting to indulge in something delicious doesn't mean you need to forfeit your nutrition. Spicy chilli bean stew and dark chocolate are two of my favourite winter time foods - so after being inspired by Green Kitchen Story's amazing take on the combination of the two I decided to put my own twist to it. This dish is rich and savoury with just a hint of chocolate and packed with loads of delicious vegetables.

Ingredients

1 tbsp olive oil

3 cloves of diced or minced garlic

1 large onion

1 teaspoon cumin seeds

1 teaspoon ground cumin

1 teaspoon paprika

2 tablespoons of fresh oregano

1-2 dried chipotle chilli

1 large yellow capsicum

1 carrot

2 zucchini

2 stalks of celery

1/2 cup chopped walnuts

2 cans of dark or pulses (like black or kidney beans)

2 cans of chopped tomatoes

1/2 cup of vegetable stock

50 grams of dark chocolate

 salt and pepper

Instructions

Place oil at the bottom of a large pot and heat to high heat, add onions and garlic and fry until onions are soft and glassy. Reduce the heat to low-medium and toast herbs, spices and chili for 1-2 minutes. Add vegetables and fry at medium-high for 5 minutes. Stir in pulses, tomatoes and stock and simmer for 40 minutes. Stir in dark chocolate take off the heat and stir in seasoning to taste. Serve with nutty brown rice or tortillas and guacamole. Enjoy.
